Lime Squash

Ingredients to make ½ liter of concentrate: 1 cup lime juice, 1 cup water and 2 cups sugar.
Preparation: You should get a cup of juice from 8-10 limes, depending on their quality. Wash and halve the limes and squeeze them first. Measure the juice and calculate the amount of the sugar and water according to the proportions given.
Method: Make syrup with the sugar and water. Bring it to the boil and simmer for a couple of minutes.
Allow the syrup to cool, pour the lime juice into it through a strainer, stir well, pour into a bottle and refrigerate.
Dilute with water as you would a commercial squash. It will keep for at least a couple of weeks in the fridge.
