Dhingri Masaledar

A bit expensive, but easy as it is delicious.

Ingredients for 2-3 servings:

400 gms/2 packets
Mushrooms
1 medium tomato
1-2 table spoon oil
¼-1/2 tsp fennel seeds
½ tsp ginger powder
¼ tsp turmeric powder
½ tsp red chilli powder
½ tsp salt

Preparation: wash and drain the mushrooms, and cut into convenient sized chunks.wash and chop the tomato fine.

Method: heat the oil, burning it if using mustard oil. Lower the heat, put in the funnel and fry for a few seconds till golden. Add the mushroom, and stir-fry on medium heat. They will give out a lot of water, so keep on stirring till they are nearly dry. Sprinkle in the spicy powders and stir-fry for 1-2 minutes more. Stir in the tomato and salt, lower the heat, cover and cook till the tomato disintegrated, about 5 minutes.
