Tomato soup is an elegant starter for a summer lunch or dinner. It takes just five minutes to assemble.
Ingredients for 4-5 servings:
4-5 sprigs fresh dill, mint or basil or failing these, a small bunch coriander leaves
3 cups tomato soup
½ cup unsweetened orange juice
3 cups curd, not too sour
½ tsp salt
½ lime, optional
¼ tsp black pepper powder
Preparation: Wash the green herb and reserve a few whole leaves for garnish. Wash the lime and squeeze out the juice, about 1 tsp.
Method: Put all the ingredients except the reserved garnish into the blender and give it a whirl. Taste, and adjust seasoning.
Chill: Thin down with a little cold water or milk if it seems too thick.
Pour out into individuals bowls and garnish with the reserved leaves.
